Varietal Notes

What is Java?

Its origins can be traced back to Ethiopia, where it made its way to Southeast Asia. Over time, this Typica varietal found its way to the islands of Sumatra and Java. It's tolerant to many major diseases with low fertilizer requirements, making it an amazing choice for smallholder farmers. It usually offers a sweet and pleasant acidity with lovely fruit flavors.


Producer Notes

Located 1500 meters above sea level in Huehuetenango, Guatemala, Mario Aguirre cultivates a variety of varietals in his farm. Mario helps run an orginization in Guatemala called Cafcom which was founded with the vision to gather the best plantations from Guatemala to provide quality coffee for all consumers around the world. This coffee was harvested by only picking ripe fruits where floating and damaged fruits are discarded. They are packed in an airtight Freshvita bag, which serves as a barrier to moisture and oxygen, for 48 hours. The bag is tied at the top and a PVC tube is left as a vent. They are placed on screens and dried in direct sunlight for 6 days then placed in solar dryers till it reaches a drying point of 10-12 degrees Celcius.
