What is Bourbon?

Bourbon is a natural mutation of the Typica varietal, named after Reunion Isaln (then known as II Bourbon) where the French cultivated the Typica plants. It is widely recognised for its complexity and sweet cup profile. It usually offers a clean cup, with a beautiful balance of sweetness and body.


Producer Notes

Located 1770 meters above sea level in the San Jose de Alto district of Cajamarca, Peru, Finca La Palestina spans 3 hectares in the northwest of the Jaén province. Finca La Palestina was born out of a deep passion for coffee and the fertile land of San Jose de Alto. With a wholehearted commitment to quality in every aspect, they ensured a consistent and elevated specialty coffee experience. After nearly 40 years of dedication, around 1990, Finca La Palestina was passed down to three sons: Juan, Jose, and Annibal. This Bourbon was hand picked at peak ripeness and floated to further remove defects. It was then depulped and dry fermented for 24 hours. It's been washed and dried for 15 days on raised beds.
