What is Sidra?

Sidra is a rare and highly regarded coffee varietal most closely associated with Ecuador, where it gained recognition for its exceptional cup quality and expressive flavor profile. Although it was once thought to be related to Typica and Bourbon, genetic research suggests Sidra has strong Ethiopian landrace ancestry. It is especially known for producing elegant, complex coffees with vibrant acidity, pronounced sweetness, and flavors often associated with florals, citrus, stone fruit, tropical fruit, and tea-like qualities. Now grown in other origins across Latin America, Sidra is prized for its aromatic intensity, clarity, and distinctive character in the cup.


Producer Notes

David Flores grew up learning coffee on his family's farm, Finca El Morito, where his curiosity for quality began early. Today he manages El Morito while tending his own plot, Finca La Neblina, where he has planted rare varities like this Sidra. The farm's high elevation, cooler climate, and steady airflow encourage slower cherry maturation and a clean, structured cup. His work continues to explore how thoughtful farming and processing can bring out the best expression of each coffee.
